Thomas the Train cake -gluten free

There is nothing holistic or earth friendly about this post. However they say to make lasting changes you must make them slowly…

This weekend I made a gluten free Thomas the Train Cake for my nephew’s birthday.


It was a lot of fun and my daughter had her first gluten free rice crispy treats. I took the advise of Dr. Vikki Petersen adventures of a gluten free mom and used the Erewhon organic rice cereal. It was great to have this classic treat again!

First I made the train with rice “krispie” treats. (I actually thought I invented this, until I did a 5 second google search and realized it’s the oldest trick in the book). I highly recommend it for any cake top sculpture.

After letting it cool I used a paring knife to shape it more…

Then the frosting… I considered doing the fondant icing thing, but remembered it was more important to get sleep before the party. I used the old; butter, powder sugar, cream, vanilla frosting.

We also made cake earlier while the rice train was cooling.
